This restaurant is worth the drive to Aztec, about 10 miles East of Farmington, NM. Hidden in this small ranch town near Farmington is a really nice restaurant with good atmosphere and wonderful service. I recommend trying the "Baja", a plate full of enchiladas of your choice and chile rellenos, green chiles filled with cheese and breaded. Cover everything with their wonderful red chile sauce, and you have the best in 'New Mexico' food without the hot. If you do like it hot, go with the green sauce. Click here for a map to Rubio's!
